These Slow Cooker Beef Tacos are one of my husband’s favorite dinners, which is no surprise at all! You can’t go wrong with these basic ingredients, flavorful spices and vibrant colors. It’s fortunate that he loves them so much because Slow Cooker Beef Tacos are also an easy meal to pull together and something that I love to eat!

Like any good low-carb taco fanatics, we pull out all the stops for dressing up our tacos. We must have cilantro, diced tomatoes, fresh limes, avocado, red onion and lettuce wraps for ours! You can also add salsa, cheese, beans, or rice depending on your preferred tastes and dietary preferences.

Slow Cooker Beef Tacos


INGREDIENTS:

  • 3-4 pound roast chuck
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon cumin
  • 1 ½ tablespoons chili powder
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 3 bay leaves
  • 3 cups beef broth
  • 3 cups water

GARNISH:

  • butter lettuce
  • red onion, diced
  • cilantro, chopped
  • tomato, diced
  • avocado, diced
  • lime, quartered

INSTRUCTIONS:

  1. In a large skillet or in a multi-cooker, brown the outside of your roast chuck for about 5 minutes on each side.
  2. Combine the roast chuck, salt, pepper, cumin, chili powder, garlic powder, onion powder, bay leaves, beef broth, and water. Cook on low for 8-10 hours.
  3. Serve on butter lettuce (or tortillas) and garnish as desired. Enjoy!
