Chicken and Capers has been one of my favorite dishes since I was a child. It’s another recipe I stole from my Mama J and that’s because it’s too good not to share. The tender garlic cloves, crispy bacon, and salty capers pair perfectly with the tomatoes and chicken thighs. You are going to love this recipe!
While fabulously flavorful, this recipe is really easy to make. First, cook the diced bacon at set it on a paper towel to de-grease. Then, in the leftover bacon grease, you simply saute the chopped onions and cook the chicken thighs, skin-side down until crispy. Lastly, add the garlic, tomato paste, capers, bacon, and tomatoes. Simmer for 20 minutes and it’s done! Yum!
I also made roasted brussels sprouts and cauliflower rice with our dinner. To make the sprouts, pop them on a pan, flat side down. Then drizzle them with olive oil, salt, and pepper. Mix well. Roast them at 400 degrees for 35 to 40 minutes and you’ve got yourself a healthy side dish!
And that’s it! Chicken and Capers is a simple, delicious, and heart-warming meal that your family will love. As always, if you make this dish let me know what you think by taking a picture and tagging Sweet Pea Living on Facebook and Instagram!
