Chicken and Capers has been one of my favorite dishes since I was a child. It’s another recipe I stole from my Mama J and that’s because it’s too good not to share. The tender garlic cloves, crispy bacon, and salty capers pair perfectly with the tomatoes and chicken thighs. You are going to love this recipe!

While fabulously flavorful, this recipe is really easy to make. First, cook the diced bacon at set it on a paper towel to de-grease. Then, in the leftover bacon grease, you simply saute the chopped onions and cook the chicken thighs, skin-side down until crispy. Lastly, add the garlic, tomato paste, capers, bacon, and tomatoes. Simmer for 20 minutes and it’s done! Yum!

I also made roasted brussels sprouts and cauliflower rice with our dinner. To make the sprouts, pop them on a pan, flat side down. Then drizzle them with olive oil, salt, and pepper. Mix well. Roast them at 400 degrees for 35 to 40 minutes and you’ve got yourself a healthy side dish!

INGREDIENTS
 5 slices of bacon, diced
 1 Spanish onion, diced
 8 chicken thighs, bone-in and skin on
 6 garlic cloves, whole
 6 oz can tomato paste
 15.60 oz can diced tomatoes
 2 tbsp capers

INSTRUCTIONS

Over medium-high heat, cook diced bacon. Transfer to paper-towel-lined plate and set aside.

In bacon grease, saute onions for 2-3 minutes. Add chicken thighs to pan (skin-side down) and brown for 4-5 minutes.

Add garlic, tomato paste, capers, bacon, and tomatoes. Simmer for 20 minutes.

Once the chicken is fully cooked and the garlic is tender, serve this dish up and enjoy!
