Creole Turkey Burgers

I am so excited to share these addictive Creole Turkey Burgers with you today! The Cajun seasonings, goat cheese, cheddar cheese, and simple toppings will have you begging for more! No need to feel guilty about having a second helping, though, because these simple ingredients are healthy-living approved. Plus, you can always skip the bun and serve this burger on a beautiful bed of spinach instead! Yum!

To begin this recipe, I got a little messy and used my hands to combine ground turkey, egg, flaxseed meal, garlic, and Creole seasoning in a large bowl. You may be wondering why I used flaxseed meal. Even though I do eat carbs, I try and create recipes that use low-carb substitutes for classic ingredients. Typically, breadcrumbs are used in burgers and meatloaves to bind the meat and additional ingredients together. I have found that flaxseed meal is an equally good binding agent that provides additional fiber, antioxidants, and omega-3 fatty acids. It’s an easy substitute that aids in weight-loss. What’s not to love?

Next, I used a ¾-cup scoop to form the patties. Using a grill pan, I cooked the burgers over high heat for about 15 minutes, flipping them halfway through. Lastly, I topped each burger with a dollop of goat cheese and a slice of cheddar cheese. I broiled the patties in the oven until the cheese was gooey (just the way I like it) and that was it! I served these beauties with grilled onions, dijon mustard, spinach, and ciabatta rolls.

INGREDIENTS
 1 ½ lbs ground turkey
 1 egg, lightly beaten
 ¼ cup flaxseed meal
 1 tbsp garlic, minced
 2 tsp Creole seasoning
 6 oz goat cheese
 4 oz sharp cheddar cheese, shredded
 2 cups baby spinach
GARNISH
 butter lettuce
 dijon mustard
 grilled onions

INSTRUCTIONS

In a large mixing bowl, combine ground turkey, egg, flaxseed meal, garlic, and Creole seasoning.

Use a ¾-cup scoop to form patties. Grill or cook for 12-15 minutes over high heat, flipping burgers halfway through.

Top each burger with a tablespoon of goat cheese. Cover goat cheese with a slice of cheddar cheese. Grill or broil on low for 3-4 minutes, until cheese is melted.

Serve in a lettuce wrap (or on a bun) with spinach, grilled onions, and dijon mustard. Enjoy!
