This Mediterranean Shrimp Skillet is one of my most recent favorite creations. The fresh ingredients, tender shrimp, and zesty Mediterranean sauce are a perfect blend for any summer night. I am absolutely obsessed with these edamame noodles, which serve as an easy low-carb pasta (especially when I cannot find a good winter spaghetti squash this time of year). Get ready to fall in love with this recipe!

The best thing about this dish is that it uses super simple ingredients. A little bit of basil, oregano, garlic, and lemon balance the dish out perfectly. The lemon juice also provides a nice zip to the sauce, which is perfect for our edamame noodles. Yum!

Don’t you just love the look of those fresh oregano sprigs? I found them at our local grocery store and thought that they would make the perfect addition to this meal. I had never cooked with fresh oregano before and I am so glad that I did! I found that the leaves provide a beautiful, full flavor that dried oregano just cannot beat.

I included some sliced cherry tomatoes for a touch of color (they were leftovers from our meal prep earlier in the week). I always add tomatoes at the end of cooking so that they do not get mushy. Lastly, I topped off our plates with feta cheese, which is totally optional.

INGREDIENTS
 1 tbsp extra virgin olive oil (EVOO)
 3 cups chicken stock
 1 ½ lbs raw medium shrimp, peeled and deveined
 1 tsp salt
 1 tsp pepper
 1 tsp basil, dried
 2 tbsp fresh oregano, minced
 3 garlic cloves, minced
 2 tbsp lemon juice
 1 cup cherry tomatoes, halved
 1 cup feta cheese, crumbled
ADDITIONAL
 pasta or pasta substitute of your choice

INSTRUCTIONS

In a cast iron skillet (or another stainless steel pan), heat EVOO and chicken stock over high heat. Add shrimp, salt, pepper, dried basil, fresh oregano, minced garlic, and fresh lemon juice. Cook shrimp until pink.

Add cherry tomatoes and feta cheese.

Serve hot over a pasta substitute of your choice! Enjoy!
