Bruschetta on toast is one of my favorite summer appetizers. The crispy bread soaked with fresh, juicy tomatoes makes my mouth water. Likewise, it’s no secret that bruschetta also pairs perfectly with chicken. After making my Chicken Enchilada Roll-Ups in May, I knew that I needed to try stuffing chicken with homemade bruschetta. It’s not only super easy to make, but this meal is sure to impress your dinner guests as well!

While my husband and I were in Italy, we went to a wine tasting at a small farm in the Tuscan countryside. After we sat down with our fellow wine-tasters, we were brought large plates of what they called “bruschetta.” To my surprise, Italian bruschetta is actually just toasted Italian bread that can be drenched in extra-virgin olive oil (the toast was quite hard). I learned that bruschetta can also be served with tomato, vegetables, beans, cured meat, or cheese. It just depends on where you are!

For an easy side dish to go along with this delicious recipe, I made Nostastic’s Truly Crispy Garlic Smashed Potatoes. These potatoes were really fun to make and tasted great! You could also serve green beans, broccoli, cauliflower, and/or whole-grain rice depending on what you have in your kitchen! The possibilities are endless.

In order to get that beautiful brown crust on my chicken, I always sear it for a few minutes in a hot pan before moving it to the oven to bake. I have found that searing allows chicken to have a much wider range of flavor. The caramelized surface creates unique nutty flavors that leave your taste buds satiated throughout the meal. Without searing, your chicken may fall flat in both flavor and texture. Please trust me一It’s worth the extra dish!

Bruschetta Stuffed Grilled Chicken

INGREDIENTS
 4 chicken breasts, boneless and skinless
 2 cups tomato, diced
 1 clove garlic, minced
 2 tsp extra virgin olive oil (EVOO)
 2 tsp balsamic vinegar
 salt, to taste
 1 cup basil, chopped (separated)
 1 cup shredded mozzarella cheese (separated)
 1 tbsp garlic powder

INSTRUCTIONS

Preheat oven to 350 degrees.

Combine tomatoes, garlic, EVOO, balsamic vinegar, salt and ¾ cup of basil in a small bowl. Set aside.

Butterfly chicken breasts (slice in half, but keep both sides attached). Cover with cling film and pound with a meat tenderizer (or rolling pin) to create an even thickness of ¼ inches across each breast.

Spoon bruschetta mixture and about a tablespoon of shredded mozzarella cheese on the inside of each chicken breast. Fold the chicken breast over and secure with a toothpick.

In a large skillet, heat up EVOO. Place folded chicken inside the pan and dust the outside of each breast with garlic powder. Cook the outside of the chicken breasts until brown, about 5 minutes on each side.

Move skillet to oven and cook for 20 minutes or until fully cooked.
