My favorite thing about making fajitas is cutting all the beautiful peppers and onions (I’m probably the only person in the world who enjoys that). Without a doubt, I always make too many though–what can I say? I love my veggies! When we have leftovers, I often serve them with eggs and potatoes for our Saturday morning breakfast, or I put them on my salad for lunch the next day. They’re the perfect condiment!

I always marinate flank steak for several hours before making this recipe. I know it’s a little tedious, but the steak really soaks up the flavors, which rounds out the dish. For this recipe, I used lemon, lime, EVOO, cumin, chili powder, paprika, cilantro, and red pepper flakes. You can always adjust the marinade to make it more (or less) spicy!

INGREDIENTS
 Extra Virgin Olive Oil (EVOO)
 1 ½ lbs flank steak, thinly
 3 bell peppers (any color), sliced
 1 white onion, sliced
 2 jalapeno peppers, sliced
 1 head butter lettuce, or tortillas
MARINADE
 1 lemon, juiced
 1 lime, juiced
 3 tbsp Extra Virgin Olive Oil (EVOO)
 1 tbsp garlic, minced
 2 tsp ground cumin
 2 tsp ground chili powder
 1 tsp paprika
 1 tsp red pepper flakes
 1 tsp salt
 1 tsp ground black pepper
 1 cup cilantro, chopped
GARNISH
 Cilantro, chopped
 lime, sliced

INSTRUCTIONS

Thinly slice the flank steak against the grain and place in a large ziplock bag.

Add marinade ingredients. Seal and let rest overnight or for several hours in the refrigerator.

Remove meat from refrigerator 30 minutes prior to cooking.

Set a stainless steel pan over high heat with a tablespoon of EVOO for 1-2 minutes until hot. Add marinated steak to pan. Cook for 4-6 minutes, until the steak is just barely red.

Move pan to broiler. Broil on high heat for 3-5 minutes, until steak is no longer red. Move steak to a plate and cover with a lid or foil.

Heat another tablespoon of EVOO for 1-2 minutes until hot. Add sliced peppers, onions, and jalapenos. Cook the vegetables, tossing as necessary, for 4-5 minutes.

Serve fajitas in lettuce wraps or on tortillas with garnish. Enjoy!
