As many of you know, I am a huge fan of quick, tasty weeknight dinners. Now that my summer break is over, I feel especially thankful for this Cabbage and Carrot Stir Fry recipe. It’s one of my favorite meals not only because of the great Asian flavors, but also because it’s a breeze to prep and make when I’m tired after work. The crunchy carrots, sautéed cabbage, and sweet sauce is a beautiful combination. I cannot wait to make this recipe again!

Through my cooking experiences, I have learned that the most simple and basic recipes are often the best. You don’t need 100 different ingredients to make a good, home cooked meal. This recipe is great because it only consists of a few basic oils, ground turkey, cabbage, carrots, green onions, ginger, and garlic. BOOM! Just like that — you’ve got yourself a meal!

Recently, my husband and I have transitioned to a whole-grain and plant based diet (we’re always changing something…) but this recipe is still a winner in my book. In the future, I will make this with tofu instead. I think that the tofu would soak up the spicy, sweet flavors of the sauce perfectly. Whether you’re vegetarian, vegan, paleo, whole30, or low-carb, I know you will love this dish!

Cabbage and Carrot Stir Fry

INGREDIENTS
 2 tbsp walnut oil
 3 tsp sesame oil, divided
 1 ½ lbs ground turkey
 1 small green cabbage, chopped
 2 cups julienne carrots
 6 green onions, finely chopped
 1 garlic clove, minced
 1 tsp ginger, grated
 salt and pepper, to taste
 2 tsp rice vinegar
 1 tbsp coconut aminos
GARNISH
 Sriracha sauce

INSTRUCTIONS

In a large nonstick skillet, heat the walnut oil and 1 teaspoon of the sesame oil.

Add the ground turkey, garlic, and ginger. Cook until turkey is no longer pink.

Add chopped cabbage, carrots, green onion, salt and pepper. Cook on high until cabbage starts to soften.

Lower heat and stir in remaining sesame oil, rice vinegar, and coconut aminos. Mix well and add salt and/or pepper as needed. Serve hot with Sriracha sauce and enjoy!
