Sometimes you pick your sandwich. Sometimes your sandwich picks you. Okay, maybe not. But a few weeks ago the idea of this sandwich flew into my head and I just couldn’t let it go. On a lazy Sunday afternoon, our leftover sweet potatoes, goat cheese, onions, and greens became a quick and easy dinner that left us going back for seconds … and maybe thirds. You are going to love this one!

One of the reasons that I get so excited for Fall is the reappearance of all our favorite foods! Sweet potatoes are arguably one of the best cold-weather veggies (in my own, humble opinion that is), but I never imagined that I would put them on a sandwich. While it might seem weird at first, it’s perfect in implementation and surprisingly fun to make!

Sweet Potato and Goat Cheese Sandwich

INGREDIENTS
 1 tbsp avocado oil
 1 large sweet potato, peeled
 ½ tsp rosemary, dried
 ½ small yellow onion, sliced thinly
 8 slices of whole grain bread
 3 oz goat cheese
 2 cups romaine lettuce
  cup balsamic vinegar

INSTRUCTIONS

Cut the sweet potato into thin slices. In a non-stick pan, heat avocado oil. Season the sweet potato slices with dried rosemary. Cook on each side for about 3-4 minutes.

Remove the sweet potato and set aside. In the same pan, sauté the onions until cooked to your liking.

Toast your bread and create the sandwich by layering goat cheese, romaine lettuce, grilled onions, and sweet potatoes. Lightly sprinkle balsamic vinegar on top of sweet potatoes and top with a slice of bread.

Cut in half and serve warm!
