I have been a little busy lately. And by “a little,” I mean really busy. I seem to have committed myself to one-too-many things (not surprising to anyone who knows me). However, even with a packed schedule, I have continued to make cooking an essential part of my day. This quick, 20-minute meal is exactly what you’ll need when you’re in a pinch for dinner. It’s not only quick, but it’s also easy to make with just ten simple ingredients! It doesn’t get any better than that.

To begin this recipe, you first need some cute baby bok choy hearts. If you’ve never cooked with bok choy before, don’t worry. This unique veggie belongs to the cruciferous family of vegetables一think cabbage, kale, broccoli, cauliflower, and Brussels sprouts. It’s easy to cook with and impossible to mess up. Bok choy has many health benefits, including cancer prevention, blood pressure, heart health, and more. Just as important, it is delicious–you don’t want miss out on this awesome vegetable!

I absolutely love the ginger sauce for this recipe. The sweet, salty, and spicy ingredients are a perfect condiment for noodles and vegetables! I think that most of you will love this, but I know that not everyone cares for spicy dishes. If you are sensitive to hot flavors, I would suggest adding less chili paste. You could also add coconut aminos, tamarind sauce, or rice vinegar (based on your dietary preferences or what’s in your fridge). This dish is versatile and easily adjustable.

Ginger & Bok Choy Noodles

INGREDIENTS
 4 oz Thai Kitchen Stir-Fry Rice Noodles
 4 baby bok choy hearts
 1 bunch green onion, chopped with white and green parts separated
 2 garlic cloves, finely chopped
 1 tbsp ginger paste
 2 tbsp soy sauce
 2 tbsp maple syrup
 1 tsp sesame oil
 13 tbsp tablespoons Sambal Oelek Chili Paste
GARNISH
 sesame seeds

INSTRUCTIONS

Wash bok choy and chop into quarters. Set aside.

Cook rice noodles according to package.

In a small bowl, mix together soy sauce, maple syrup, sesame oil and chili paste.

In a nonstick skillet over medium heat, cook the white part of the green onion, garlic, and ginger paste until fragrant. Add in bok choy quarters. Cook until soft, about 5-7 minutes.

Reduce heat to low and add in cooked rice noodles. Add sauce and toss together.

Top with sesame seeds and green part of the green onion. Serve hot and enjoy!
