Did you know that sweet potatoes have more potassium than bananas? It’s true! This root vegetable is also an excellent source of dietary fiber, which helps your body maintain a healthy digestive tract. With that being said, it seems apparent that we should all make an extra effort to eat more of these wonderful orange vegetables.

Thankfully, this Sweet Potato and Orzo Tikka Masala is here to help. It’s easy, healthy, and so appetizing. My husband and I gushed over the flavor of the homemade tikka masala sauce throughout our entire dinner. It had the perfect amount of kick to it (if I do say so myself). I’ll leave you with just a small reminder for when you make this dish—don’t forget the naan!

Sweet Potato and Orzo Tikka Masala

SWEET POTATO MIXTURE:
 ½ white onion, diced
 3 garlic cloves, crushed and minced
 1 tbsp extra virgin olive oil (EVOO)
 3 sweet potatoes, skinned and diced into 1/4 inches
 1 green bell pepper, de-seeded and diced
 4 oz whole wheat orzo
 cilantro, chopped for garnish
TIKKA MASALA SAUCE
 15 oz coconut milk
 15 oz tomato sauce
 6 oz tomato paste
 2 Serrano chilies, deseeded (only use 2 if you like your food a little spicy)
 1 tsp ginger, grated
 1 tsp garlic, minced
 1 tsp yellow or red curry powder
 ½ tsp salt
 ½ tsp cumin
 ½ tsp cayenne pepper
  tsp fenugreek leaves
 2 tbsp lemon juice, fresh

INSTRUCTIONS

Combine sauce ingredients in a food processor. Puree until smooth and creamy. Set aside.

In a large non-stick pan, heat onion and garlic with EVOO over medium heat. Cook until onions are translucent.

Add potatoes and sauce. Cover pan with lid until simmering.

Add diced bell pepper and mix well. Cover pan with lid and let simmer for 15-20 minutes.

Cook orzo according to package directions and drain.

Once sweet potatoes are softened, add orzo to the pan. Mix well. Garnish with cilantro and serve with warm naan. Enjoy!
