I have been trying to include more raw vegetables into our weekly routine. Don’t get me wrong… I have nothing against cooked vegetables; I just like to seek variety in our diet whenever possible. I have found that smoothies provide an effortless way to work in additional vitamins and minerals. As a result, I’ve created this Blueberry Breakfast Smoothie featuring THREE cups of raw, leafy-green spinach. The best thing about this recipe is that it’s quick to make and take with you to work. Blueberry Breakfast Smoothie

INGREDIENTS
 3 cups spinach*
 1 cup blueberries, frozen*
 1 cup pineapple pieces, frozen*
 1 banana, peeled
 1 cup almond milk
 ½ cup 100% pure cranberry juice, unsweetened (do not be tricked by cocktail juice!)
 1 tbsp flaxseed

INSTRUCTIONS

Blend all ingredients in a blender until mixture reaches your desired consistency. Add almond milk or cranberry juice until your smoothie is a drinkable liquid.

Serve cold and enjoy with a reusable straw!
