Winter squash has always been one of my preferred replacements for spaghetti, but it wasn’t until recently that I had the idea to create a hearty tofu “meat” sauce to go with it. In this recipe, I used Rao’s Homemade Marinara Sauce (along with a few simple ingredients) to create a tofu-based red sauce that is out of this world. Tofu “Meat” Sauce and Spaghetti

INGREDIENTS
 ½ yellow onion, chopped
 ½ jicama bulb, grated
 3 cloves garlic, minced
 14 oz extra firm tofu, pressed and cubed
 2 tbsp nutritional yeast
 1 tbsp soy sauce
 1 tsp chili powder
 1 jar of your preferred marinara sauce
 1 lb your preferred spaghetti or spaghetti squash

INSTRUCTIONS

Begin to cook your spaghetti or spaghetti squash.

In a large skillet heat onion, jicama, and garlic over medium-high heat for 2-3 minutes until fragrant.

Add pressed tofu cubes, nutritional yeast, soy sauce, and chili powder. Mix well, turning frequently for 3-4 minutes until warm.

Add marinara sauce and heat until bubbly.

Using an immersion blender (or large spatula), break up tofu chunks.

Serve sauce over spaghetti or spaghetti squash and enjoy!
