With the summer weather getting warmer, I’ve become obsessed with the flavor of lime: lime wedges, lime flavored La Croix, and even lime stir fry! Don’t worry… the zesty lime flavor in this recipe isn’t overwhelming. In fact, it pairs perfectly with the nutty sesame oil sauce! This recipe checks all the boxes: it’s easy, healthy, and delicious. Coconut & Lime Tofu Stir Fry


Yields4 Servings

INGREDIENTS
 14 oz extra firm tofu, pressed, drained and cubed
 ¼ cup coconut cream
 2 tbsp lime juice
 ½ tsp coconut sugar
 1 tbsp extra virgin olive oil (EVOO)
 ¼ tbsp sea salt
 ½ white onion, sliced
 1 tbsp ginger, minced
 3 cloves garlic, minced
 1 red bell pepper, sliced
 1 tbsp sesame oil
 2 tbsp soy sauce
 1 tbsp red chili sauce (Sambal Oelek)
 ¼ lb spinach
 2 tsp sesame seeds
 6 oz soba noodles

INSTRUCTIONS

Heat water for soba noodles.

Soak pressed tofu in coconut cream, lime juice, coconut sugar, and EVOO for 10-15 minutes. Drain tofu.

In a large non-stick skillet, heat the tofu over high heat, until slightly brown.

Add onion, ginger, garlic, red bell pepper, sesame oil, soy sauce, and sambal oelek to non-stick pan. Mix well.

Cook soba noodles for 2-3 minutes. Drain.

Add noodles to pan and mix well. Top with additional lime juice (optional) and sesame seeds. Serve hot with Sriracha and enjoy!
