When you have a schedule as crazy as ours, weekly meal-prep is a must. It saves time, money, and the hassle of deciding  what you’re going to bring for lunch each day! After a year of practice, I have found that the perfect meal-prep salad consists of assorted textures, bold flavors, and sturdy ingredients (there is nothing worse than opening your salad and finding out that the spinach went bad)! With this Broccoli & Blueberry Salad, you won’t need to worry. Not only is it one of our favorite work lunches, but it promises to last all week! I hope you enjoy this one as much as we do!

Broccoli & Blueberry Salad

INGREDIENTS
 8 oz fresh baby spinach
 8 oz fresh arugula
 1 cup broccoli florets
 ½ cup blueberries
  cup crumbled feta cheese
 4 tbsp dried cranberries
 2 tbsp roasted sunflower seeds

INSTRUCTIONS

Mix the spinach and arugula well.

Top spinach and arugula with broccoli, blueberries, feta, cranberries, and sunflower seeds. You can buy (or make) a lemon poppy-seed salad dressing for this salad, but I prefer it without any dressing.

Serve cold and enjoy!
