Creole Turkey Burgers with Spinach

INGREDIENTS
 1 ½ lbs ground turkey
 1 egg, lightly beaten
 1 cup flaxseed meal
 1 tbsp garlic, minced
 2 tsp Creole seasoning
 6 oz goat cheese
 4 oz sharp cheddar cheese, shredded
 2 cups baby spinach
GARNISH
 butter lettuce
 dijon mustard
 grilled onions

INSTRUCTIONS

In a large mixing bowl, combine ground turkey, egg, flaxseed meal, garlic, and Creole seasoning.

Use a ¾-cup scoop to form patties. Grill or cook for 12-15 minutes over high heat, flipping burgers halfway through.

Top each burger with a tablespoon of goat cheese. Cover goat cheese with a slice of cheddar cheese. Grill or broil on low for 3-4 minutes, until cheese is melted.

Serve in a lettuce wrap (or on a bun) with spinach, grilled onions, and dijon mustard. Enjoy!
